I would love to get this up and running for a technology festival here in Bogotá, Colombia.

I do not have a ethernet adapter. How, if at all, can I get this working?

You could go the manual way and deploy PirateBox on Raspbian, and deploy the WiFi configuration before the first boot in headless mode (wpa_supplicant and ssh enabled)

You could also set it to work as a hotspot/access point, and a client simultaneously.
